Lauren's 20 Minute Beef Stroganoff

This one pot wonder takes 5 minutes to prepare and only 20 minutes cooking time. It is perfect for a weeknight quick fix, and is a crowd favourite. I serve with San Remo high fibre vegeroni, which packs a micronutrient punch.

Ingredients:

  • 2 tsp onion powder

  • 2 tsp garlic powder

  • 2 tsp smoked paprika

  • 2 tbsp oil

  • 750g lean beef strips

  • 1 pinch salt, to taste

  • 200 g sliced mushrooms

  • 50 g tomato paste

  • 1 meat stock cube

  • 1 tbsp cornflour

  • 1 tsp Dijon mustard

  • 120 g light sour cream

Thermomix Directions:

  • Place beef, onion powder, garlic powder, paprika, oil and salt in bowl and cook 10 min/100°C/speed 1, placing simmering basket instead of measuring cup onto mixing bowl lid.

  • Add button mushrooms, tomato paste, stock cube, cornflour, mustard and sour cream and cook 10 min/100°C/speed 1, placing simmering basket instead of measuring cup onto mixing bowl lid.

  • Allow to rest for 5 minutes

Saucepan Directions:

  • Place beef, onion powder, garlic powder, paprika, oil and salt in saucepan and cook for 10 min or until meat is browned.

  • Add button mushrooms, tomato paste, stock cube, cornflour, mustard and sour cream and cook for an additional 10 min or until sauce has thickened.

  • Allow to rest for 5 minutes

Serve with your choice of pasta or rice. Both work really well.
