Lauren's 20 Minute Beef Stroganoff
This one pot wonder takes 5 minutes to prepare and only 20 minutes cooking time. It is perfect for a weeknight quick fix, and is a crowd favourite. I serve with San Remo high fibre vegeroni, which packs a micronutrient punch.
Ingredients:
2 tsp onion powder
2 tsp garlic powder
2 tsp smoked paprika
2 tbsp oil
750g lean beef strips
1 pinch salt, to taste
200 g sliced mushrooms
50 g tomato paste
1 meat stock cube
1 tbsp cornflour
1 tsp Dijon mustard
120 g light sour cream
Thermomix Directions:
Place beef, onion powder, garlic powder, paprika, oil and salt in bowl and cook 10 min/100°C/speed 1, placing simmering basket instead of measuring cup onto mixing bowl lid.
Add button mushrooms, tomato paste, stock cube, cornflour, mustard and sour cream and cook 10 min/100°C/speed 1, placing simmering basket instead of measuring cup onto mixing bowl lid.
Allow to rest for 5 minutes
Saucepan Directions:
Place beef, onion powder, garlic powder, paprika, oil and salt in saucepan and cook for 10 min or until meat is browned.
Add button mushrooms, tomato paste, stock cube, cornflour, mustard and sour cream and cook for an additional 10 min or until sauce has thickened.
Allow to rest for 5 minutes
Serve with your choice of pasta or rice. Both work really well.
